In order for this to work, you will need to have enabled Gmail to hold back the delivery of sent messages for some time. In order to do this, you will have to click the settings gear in Gmail. After you have done this you need to select settings from the menu that appears. After this you then go to the Labs tab. After this you then have to make sure “enable” is selected for “undo send”. When you’ve done this, click on save changes.

After you have done this you can then increase the time it takes for messages before the email gets delivered. In order to do this, you will again need to click on the settings gear in the Gmail toolbar. Choose settings from the menu that comes up and after this you will need to click on the General category. You can then pick the amount of time you want Gmail to wait in order to actually deliver your message.

In order for you to actually unsend an email after you have sent it you will need to do one of three things. The first thing is you will need to either click on the cancel immediately button, although this will only work if background sending is not enabled. If it is you can click on undo when it appears or you can simply use Ctrl+Z on your keyboard to do it.

I used cancel emails rarely but successfully on Outlook/Exchange. There I used a minute but in Gmail 30 seconds is the maximum. Interestingly, after reading this post, I tried it on an email to myself and it didn't work! Too often a Google thing - do they test?
